Mycoprotein 101: What it is and why you should eat it

Mycoprotein this and mycoprotein that – what even is mycoprotein?! We understand that this is a question you might have so let’s make everything clear… Class is in session: welcome to Mycoprotein 101!

What and how

Mycoprotein is a high-quality protein source made from filamentous fungi. In Mati’s products, the fungus is Fusarium venenatum. It has a meat-like texture and a neutral flavour making it perfect for meat alternatives.

Mycoprotein is grown using a fermentation process. A similar process is used when making yoghurt, beer, or sourdough bread. The fungi are grown in a controlled environment and fed with a mixture of glucose and other nutrients. As the fungi grow, they form a network of fibers aka mycelium, the “root” of the mushroom. This creates the final product – mycoprotein. Fermentation is very sustainable as it requires fewer resources than traditional livestock farming, resulting in a lower carbon footprint.

So no, mycoprotein does not come from the body of the mushroom nor do we pick mycelium in the forest to make our products. 😜

Why you should eat mycoprotein

Mycoprotein has an impressive nutritional profile:
